It was a stalwart of my 20s. There are many variations but this is more or less Richard Olney’s recipe from Simple French Food.  The rice is used to give the dish some substance; it makes the batter less obviously eggy and melds with the other ingredients. If you want the end result to look neat, hold back a third of the courgette slices and put them on top of the batter in concentric circles, each overlapping the next.   Overview Prep time 15 mins Cook time 1 hr 12 mins Serves 4 as a side dish or 2-3 as a lunch Ingredients 50g long-grain white rice 75g good white bread, not including crusts 250ml milk 3 tbsp extra-virgin olive oil 2 large eggs, lightly beaten 50g cheese, grated, a mixture of Parmesan and Gruyère 450g courgettes, sliced wafer-thin (use a mandoline if you have one) butter, for greasing Method Step Heat the oven to 190C/180C fan/gas mark 5. Step Cook 50g rice in boiling water for 12 minutes. Drain, rinse and leave to cool. Step Add 75g bread, torn up, to 250ml milk, then add 3 tbsp extra-virgin olive oil, 2 lightly beaten large eggs, about 30g grated cheese and 450g thinly sliced courgette. Step Stir in the rice, season, then pour into a buttered gratin or other ovenproof dish. Step Sprinkle the remaining 20g grated cheese on top. Bake for about an hour. The top should be gold in patches and souffléd. Serve with a green salad.
