Step Toss 2 large roasted red peppers (cut into strips about 2cm wide), 1 tbsp capers (rinsed of salt or brine), 1 finely chopped garlic clove, 50g coarse white breadcrumbs, ½ tsp dried chilli flakes and 3 tbsp coarsely chopped flat leaf parsley together in a small gratin dish with 1 tbsp of the extra-virgin olive oil. Step Bake in the oven for 10 minutes. Step Cook 350g spaghetti in plenty of boiling salted water until al dente. When it’s almost ready, heat the remaining 2 tbsp extra-virgin olive oil in a frying pan and fry 4 large eggs, spooning the warm oil over the top to cook the yolks. Season. Step Drain the pasta (keep a little water back) then put it back in the saucepan or into a warm serving bowl. Add the pepper mixture and the fried eggs, cutting or tearing the eggs and tossing them through the pasta. Step Divide between four plates and serve with grated Parmesan.
